Baked Eggs Italian Style


Serves 4

Who doesn’t love brunch, especially when it’s home-made and shared with loved ones?! Start Mother’s Day off right with this simple and effective recipe for delicious Baked Eggs Italian Style.

Ingredients

8 eggs

1 tbsp butter or olive oil

8 slices of prosciutto

1 cup marinara sauce

1/4 cup whipping cream or whole milk

1/4 cup freshly grated Parmesan cheese

8 cherry or grape tomatoes halved

1/4 fresh herbs chopped (we like basil, parsley, thyme or chives; feel free to mix them up!)

Salt & pepper to taste

1 baguette sliced, toasted and drizzle with olive oil

Equipment

4 small ramekins

Method

  1. Preheat oven to 350°F.
  2. Grease ramekins with butter or oil.
  3. Divide marinara sauce among ramekins.
  4. Place prosciutto slices around the sides of the ramekin.
  5. Carefully crack eggs and place 2 eggs in each ramekin, taking care to keep the yolks intact.
  6. Pour whipping cream or milk gently into each ramekin then top with tomato halves.
  7. Sprinkle parmesan cheese over top,
  8. Bake for 10-15 minutes until whites are just set. Remove from oven. Eggs will continue to cook in ramekin.
  9. Sprinkle herbs on top along with freshly cracked pepper and salt to taste if desired.
  10. Enjoy with toasted baguette slices drizzled with olive oil!
