Who doesn’t love brunch, especially when it’s home-made and shared with loved ones?! Start Mother’s Day off right with this simple and effective recipe for delicious Baked Eggs Italian Style.
Ingredients
8 eggs
1 tbsp butter or olive oil
8 slices of prosciutto
1 cup marinara sauce
1/4 cup whipping cream or whole milk
1/4 cup freshly grated Parmesan cheese
8 cherry or grape tomatoes halved
1/4 fresh herbs chopped (we like basil, parsley, thyme or chives; feel free to mix them up!)
Salt & pepper to taste
1 baguette sliced, toasted and drizzle with olive oil
Equipment
4 small ramekins
Method
- Preheat oven to 350°F.
- Grease ramekins with butter or oil.
- Divide marinara sauce among ramekins.
- Place prosciutto slices around the sides of the ramekin.
- Carefully crack eggs and place 2 eggs in each ramekin, taking care to keep the yolks intact.
- Pour whipping cream or milk gently into each ramekin then top with tomato halves.
- Sprinkle parmesan cheese over top,
- Bake for 10-15 minutes until whites are just set. Remove from oven. Eggs will continue to cook in ramekin.
- Sprinkle herbs on top along with freshly cracked pepper and salt to taste if desired.
- Enjoy with toasted baguette slices drizzled with olive oil!
