For the past five years, Chef Brian Luptak was the executive chef of Vancouver’s awarding winning restaurant, The Acorn and sister restaurant The Arbor. Under Brian’s stewardship, The Acorn restaurant has won many accolades including:
- No. 1 in Best Vegan-Friendly Restaurants in the world - Big 7 Travel magazine
- Top 20 restaurants in Vancouver – TimeOut Magazine
- Voted as one of the best vegetable-forward destinations in the world – CNN & The Daily Meal
While Brian is known in the industry for his creative and playful approach to plant-based dishes, he also brings to the school his wealth of experience from his many years at the Fairmont properties in Banff and Lake Louise, and at the Pan Pacific Hotel in Vancouver. At these hotel and resort properties, he designed and managed bespoke menus for large scale events such as weddings and conferences. Brian has a deep interest in working with farmers, foragers and fishermen to design local and sustainable menus.
At Pacific Institute of Culinary Arts, Brian hopes to mentor, teach and encourage a sense of drive and creativity in the minds of students and future culinary leaders.
